Chocolate Covered Pineapple Slice with Toasted Coconut

This chocolate covered pineapple recipe is sweet, refreshing and perfect for all your sweet tooth cravings!

  • 1 fresh pineapple peeled and cored
  • 12 oz bag of Ghirardelli dark chocolate melting wafers
  • 1 c coconut flakes toasted


  1. Prepare a large baking sheet with parchment paper

  2. Slice pineapples into circles, then cut circles into halves (if desired)

  3. Microwave the Ghirardelli melting wafers in a microwave-safe bowl for 30 seconds on the half power or defrost setting

  4. Thoroughly stir the chocolate, then continue to microwave in 15-second intervals and stir until smooth

  5. Dip halved pineapple circles into melted chocolate and place on the lined baking sheet

  6. Sprinkle with toasted coconut flakes and let sit until chocolate hardens
