Mexican street corn pasta salad

Meixcan Street Corn Pasta Salad

A deliciously easy and cheesy Mexican street corn pasta salad.

Ingredients

Salad

  • 2 cups mini farfalla pasta
  • 3 cups corn (canned) or 3-4 ears of fresh corn
  • 1/2 cup black beans
  • 1 avocado diced
  • 2 tbsp cilantro chopped
  • 1 tbsb jalapeno diced
  • 5-7 strips bacon
  • 1/2 cup queso fresco crumbled

Dressing

  • 1/2 c full fat mayo
  • 3 tbsp lime juiced
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1/8 tsp ground cumin
  • 1/4 tbsp salt

Instructions

  1. Cook pasta accordingly. Drain and dry, completely.

  2. If desired, roast corn (optional).

  3. Combine cooled pasta, corn, avocado, onions, cilantro, jalapeno, bacon, and cheese and toss until mixed.

  4. In a small bowl whisk dressing ingredients until blended well.

  5. Pour dressing over salad mixture, toss well and enjoy!
