Healthy Taco Soup

During the cooler months, this Healthy Taco Soup is perfect for holiday parties, casual get-togethers or just warming up. It’s simple to make and everyone will love it.

What You Need: Extra lean ground turkey, unsalted chicken broth or stock, no salt added corn, no salt added diced tomatoes & green chiles, no salt added diced tomatoes (ROTEL), reduced sodium kidney beans, reduced sodium pinto beans, taco seasoning and dry ranch mix.

(Chicken broth, pinto beans, diced tomatoes, kidney beans, diced tomatoes & green chilies, corn, ranch mix, taco seasoning, and extra lean turkey.)

Step One:  In a large skillet, brown the meat over medium-high heat. Once nearly done, add in 1 tbsp of the taco seasoning. Set aside.

Step Two: In the bottom of a slow cooker, stir together the chicken broth, corn, diced tomatoes & green chiles, diced tomatoes (ROTEL), kidney beans, pinto beans, the remaining 1 tbsp of the taco seasoning and 1 tbsp dry ranch mix.

Step Three: Add the turkey and stir again.

Step Four: Cover and cook on high for 4-6 hours or on low for 6-8 hours. When done, top with your favorite toppings like reduced fat shredded cheddar and plain fat free greek yogurt. Green onions are optional.
